Ingredients

  • 2 lbs oxtail (or if you have another type of bone, feel free to substitute)
  • 2 medium onions, chopped
  • Large carrot, chopped
  • 1 celery stalk, chopped
  • Tbs ghee or coconut oil 1 –
  • 2 garlic cloves, minced
  • 2 tsp curry powder (or more to taste)
  • 1 tbs lemon or lime juice (or more to taste)
  • 1 tsp Himalayan or sea salt

Instructions

  • Step 1 Place your oxtail in a large pot and cover with water. Bring to a boil, then lower heat and simmer for about 1. 5 hours or until meat is falling off the bone. Strain the broth and return to stove, setting broth aside until ready to use.
  • Step 2 While the oxtail is cooking prepare the vegetables. Chop the onion, carrot and celery. Mince the garlic. Wash the lentils and place in a pot with 2 cups of water. Bring to a boil, then lower heat and simmer for about 1. 5 hours or until lentils are soft. Drain and set aside.
  • Step 3 When the oxtail broth is ready, remove from heat and let it cool slightly. Remove the meat from the bones and shred into bite size pieces. Set aside.
  • Step 4 In a large skillet add the olive oil, onion, carrot and celery. Cook over medium heat for about 5 minutes. Add the garlic and sauté for 1 minute. Stir in the paprika, cumin, salt, and chili powder and cook for 1 minute more.
  • Stir in the carrots, celery, lentils and water.
  • Step 5 Mix well and cover pot. Let mixture come to a boil, then lower heat and let simmer for about 20 minutes or until carrots are tender.
  • step 6 Place shredded oxtail into the vegetable mixture and stir well. Let oxtail rest for 5 minutes before serving.
